4 large Egg Whites
1/4 cup Green Bell Pepper, chopped
1/4 cup Bell Pepper, chopped
2 tbsp Onion, chopped
1/8 tsp Sea Salt
2 tbsp Reduced-Fat Cheese, shredded
1. Spray frying pan with cooking spray and heat over medium. Add chopped peppers and onion to pan and cook for 4 minutes, or until tender. Remove vegetables from pan and set aside.
2. Carefully wipe pan and spray with cooking spray. Pour egg whites into pan over medium heat and loosely cover with foil for 1 ½ minutes. Remove foil and lift edge of egg whites to allow for full cooking.
3. Place cooked vegetables on half of egg whites, sprinkle with salt and cheese. Fold other half of egg whites over vegetables and remove pan from heat to set.
4. Serve and enjoy!
