Spiced Pickled Beets Recipe

Pickled beets can be preserved for months and add a great tang and color as a side dish. Additionally, he pickling liquid is a great base for other vegetables  such as cucumbers, carrots and onions. Read how to do it below!

Ingredients:

  • 3 pounds small fresh beets
  • 2 cups sugar
  • 2 cups water
  • 2 cups cider vinegar
  • 2 cinnamon sticks (3 inches)
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice

Preparation Instructions:

1). Scrub beets and trim tops to 1 in, placing in a deep pan. Place in oven and cover with water, bringing to a boil. Reduce heat; cover and simmer 25-35 minutes or until tender. Remove from water; cool. Peel beets and cut into fourths.

2). Place beets in oven and add sugar, water and vinegar.

3). Place spices in a cheesecloth bag and add to beet mixture, bringing everything to a boil. Reduce heat; cover and simmer 10 minutes. Discard spice bag.

4). Remove beets from tray and carefully ladle hot liquid over beets. Allow to cool and serve.
