Crunchy Kale & Carrot Slaw Recipe

Add this tasty side dish to your choice of entree and enjoy a full meal with great nutrients!


1 bunch Kale, remove stems and thinly slice leaves
1 large Carrot, shredded
1/2 Orange, juiced
1/2 Lemon, juiced
1/2 Red Onion, thinly sliced
1 slice Cooked Bacon, chopped (optional)
3 tbsp Low Fat Mayonnaise
1 tbsp Olive Oil
Salt and Ground Black Pepper, to taste


1. Add kale, carrot, orange juice, lemon juice, salt, and pepper in a large bowl, use your hands to rub juices into leaves. Let stand 3 minutes.

2. Bring a pot of water to a roiling boil, add onion and cook 15 to 30 seconds, or until they start to soften. Remove from boiling water and immediately place in a bowl of ice water to stop cooking process. Drain ice water, dry onion with paper towel, and add to kale mixture.

3. Stir together mayonnaise, olive oil and bacon, add to kale mixture and toss to coat.

4. Serve and enjoy!
