Southwestern Breakfast Omelet Recipe

Add some extra flavor to your healthy breakfast egg whites with this new twist on your omelet. Enjoy!

Ingredients:

2 tbsp Cilantro, chopped
1/4 tsp Salt
4 Large Egg Whites
1 Large Egg
1/2 cup Canned Black Beans, rinsed and drained
1/4 cup Green Onions, chopped
1/4 cup Reduced-Fat Cheddar Cheese, shredded
1/4 cup Salsa
Cooking Spray

Directions:

1. In a bowl, combine first 4 ingredients and whisk. In a 2nd bowl combine beans, onions, cheese, and salsa.

2. Apply cooking spray to a frying pan and put on stove at medium heat. Pour egg mixture into pan and let set slightly. Gently lift edges of omelet and allow unset egg to flow underneath and cook for 3 minutes and flip.

3. Place bean mixture onto half of the omelet and fold uncovered half over. Cook for 1 minute or until cheese melts.

4. Remove omelet from pan, serve and enjoy!
