Cranberry & Blue Cheese Turkey Sandwich

Don’t let leftover go to waste. Use this fantastic turkey sandwich recipe to transform dinner into a perfect lunch.

Ingredients:

1/3 cup Blue Cheese
1 tbsp Unsalted Butter, softened
Cooked Turkey, sliced or shredded
2/3 cup Cranberry Sauce
2 cups Arugula or Mixed Spring Greens
4 slices Whole-Wheat or Multi-Grain Bread

Directions:

1. Combine blue cheese and butter in small dish and mix well.

2. Spread butter mixture on bread, add turkey and cranberries, top with greens.

3. Cut in half to avoid a mess and enjoy!
