Enjoy this tasty pulled pork recipe on the weekend, or put it in the slow cooker before you leave for work any day of the week.
1 (3 lb.) Boneless Pork Shoulder, skin and excess fat removed.
1 medium Onion, chopped
1/2 cup Water
2 cups Barbeque Sauce
2 tbsp Mustard
2 tbsp Honey
1 tbsp Soy Sauce
Salt & Pepper, to taste
1. Scatter chopped onion on bottom of slow cooker and place pork (with skin and fat removed) on top. Pour water over pork, cover, and cook on low for 8 hours or until extremely tender.
2. Remove pork from slow cooker and let cool. Pull meat into thin shreds and remove remaining fat. Skim fat from liquid in a slow cooker while meat is removed.
3. In a small bowl stir together barbeque sauce, mustard, honey, and soy sauce. Place pork in slow cooker and pour mixture over top, stirring to mix. Season with salt and pepper to taste and cook for 1 hour on low.
4. Serve with Crunchy Kale & Carrot Slaw and your choice of vegetable. Enjoy!
