Try a new twist on an old favorite with this easy to make and nutritious tuna melt recipe. Try it for lunch or dinner, and enjoy!
2 small Zucchini
2 tbsp Olive Oil
1 tin Tuna, drained
1 stalk Celery, finely diced
1/2 small Red Onion, finely diced
2 tbsp Lemon Juice, fresh
1/4 tsp Dried Dill, optional
1/2 cup Cheese, optional
1. Preheat oven to 400°F.
2. Slice your zucchini in half and use a spoon to scoop out approximately 1 inch from the center. Brush zucchini halves using 1 tbsp of olive oil and roast in oven on a parchment lined baking sheet for 15 to 20 minutes of until tender.
3. Mix together tuna, celery, onion, and dill while adding fresh lemon juice and 1 tbsp of olive oil.
4. Top zucchini halves with tuna mixture and add cheese if desired. Broil in oven for 2 to 3 minutes or until cheese is crispy on top.
