2 cups Leftover Stuffing
1 medium Sweet Potato, grated
2 tbsp Unsalted Butter
Salt & Pepper, to taste
1. Melt butter in a nonstick pan over medium heat and add sweet potato. Season with salt and pepper to taste and cook until tender, about 5 minutes. Stir occasionally.
2. Add stuffing to pan and cook for 6 to 8 minutes, pressing down firmly with a spatula to brown and crisp the bottom. Flip mixture and repeat until brown and crisp on the other side.
3. Remove from pan and serve with your choice of breakfast protein.
