This easy to prepare salad is an excellent source of healthy ingredients. Make it at home and serve it with your choice of protein.
1 tbsp Honey
1 tsp Whole-Grain Dijon Mustard
1/4 tsp Ground Cinnamon
1/4 tsp Salt
1/4 tsp Black Pepper
2 tbsp Apple Cider Vinegar
2 tbsp Water
1 tbsp Extra-Virgin Olive Oil
5 ounces Fresh Baby Spinach
3/4 cup Dried Cranberries
1/4 Cup Roasted Pumpkin Seeds (salted or unsalted)
1/3 cup Mandarin Orange Pieces
1/3 cup Feta Cheese
1. Whisk together first 5 dressing ingredients in a bowl until smooth. Add vinegar, water, and olive oil and whisk until fully combined.
2. In a second bowl, combine spinach, cranberries and pumpkin seeds. Pour dressing onto salad and mix well.
3. Top with Mandarin Orange and Feta Cheese. Serve and enjoy!
