If you are looking for a great vegetarian option for dinner at home, this loaded cauliflower casserole is a fantastic option. Try it and share with your family and friends.
4 to 5 cups Cauliflower, cut into large pieces
2 cups Low-Fat Sour Cream
1 1/2 cups Low-Fat or Non-Dairy Cheese, shredded
6 Green Onions, chopped
1/2 tsp Salt
Pinch of Black Pepper
5 slices Bacon, optional (fat trimmed)
1. Over a boiling pot of water, steam cauliflower for 10 minutes and drain well. Chop cauliflower into very small pieces and add to a mixing bowl.
2. Add sour cream, salt, pepper, half of your chopped onions, half of your cheese, and half of your bacon (if desired) to cauliflower in bowl. Mix together until fully combined.
3. Place cauliflower mixture in baking pan (coat with non-stick spray) and top evenly with remainder of cheese and bacon (if desired).
4. Bake in oven at 350 degrees Fahrenheit for 20 minutes. Remove from oven, sprinkle with green onions and enjoy!
