Pasta with Roasted Vegetables Recipe

Prepare a tasty and vegetable filled dish for dinner at home this week with this easy to make recipe. Enjoy!


1 medium Zucchini, diced
1 large Onion, thinly sliced
1 Sweet Bell Pepper, seeded and diced
2 tbsp Extra-Virgin Olive Oil
2 large Tomatoes, chopped
1/4 cup Fresh Basil, chopped
2 cloves Garlic, minced
12 ounces Whole Wheat Pasta
1/2 cup Feta Cheese, crumbled (optional)


1. Preheat oven to 450 degrees Fahrenheit, and put a large pot of lightly salted water on to boil.

2. Place zucchini, bell pepper, and onion in a bowl and toss with 1 tablespoon of olive oil. Transfer vegetables to a baking sheet, sprinkle with salt and pepper, and place in oven to roast. Stir vegetables every 5 minutes until browned and tender (15 to 20 minutes).

3. Mix tomatoes, basil, and garlic in a large bowl and add 1 tablespoon of olive oil. Sprinkle with salt and pepper.

4. Add pasta to boiling water and cook for 8 to 10 minutes, or until desired texture. Drain pasta and add to large bowl with tomato mixture. Add roasted vegetables to large bowl and mix all ingredients together well.

5. Top with feta cheese if desired and enjoy!
