1 cup White Rice Flour
1 cup Brown Rice Flour
1 cup Tapioca Flour
1 1/4 cup Warm Water, divided
3 tbsp Sugar, divided
1 tbsp Yeast
1 tbsp Olive Oil
1 tbsp Salt
3/4 tsp Xanthan Gum
1/2 tsp Baking Powder
1. In a small bowl, combine 3/4 cup of warm water (110°F) and yeast. Let sit for 5 minutes, sprinkling in 1 tbsp of sugar after 3 minutes.
2. I a larger bowl, combine white rice flour, brown rice flour, tapioca flour, xanthan gum, salt, baking powder and 2 tbsp sugar. Mix with whisk until combined well.
3. Create a well in the dry ingredient mixture and slowly add yeast and water mix. Add olive oil and 1/2 cup warm water, and stir until well combined.
4. Use brown rice flour to dust a clean surface before spreading dough onto a pizza stone or baking pan (coated with nonstick spray), cover with sauce and your choice of toppings, and bak in oven at 350°F.
