Try this veggie dish at home for a change in your dinner menu. Packed with flavor, serve with your favorite bread to soak up the extra sauce.
3 medium Eggplants, peeled and thinly sliced
2 large Eggs, beaten
6 cups Spaghetti Sauce
4 cups Italian Seasoned Bread Crumbs
4 cups Mozzarella Cheese, shredded
1/2 Parmesan Cheese, grated
1. Preheat oven to 350 F.
2. Place eggs and breadcrumbs in separate bowls. Dip eggplant slices in egg first, and then bread crumbs, coating fully.
3. Bake breaded eggplant slices in oven for 5 minutes on each side.
4. Spread a layer of spaghetti sauce on the bottom of a 9×13 inch baking pan. Place a layer of breaded eggplant slices on the sauce, sprinkle with cheeses. Continue building layers with sauce, eggplant slices, and cheese until all ingredients have been added.
5. Bake for 35 minutes, or until golden brown.
