1/4 cup Yogurt, your choice (plain or lemon recommended)
1/2 cup Lemon Juice
1/2 cup Sugar
1 cup White Flour
3 1/2 tbsp Vegetable Oil
1/2 tbsp Pure Vanilla Extract
1 tbsp Lemon Zest, one medium lemon
1/2 tsp Baking Soda
1/4 tsp Salt
1. Preheat oven to 350° F.
2. Grease an 8×5 inch loaf pan.
3. In a medium bowl whisk together sugar, flour, salt, and baking soda.
4. In a second bowl mix together yogurt, lemon juice, oil, vanilla, and lemon zest.
5. Pour wet ingredient mixture into dry ingredients and stir until all ingredients are evenly mixed.
6. Pour batter into greased loaf pan and bake for 25 minutes.
