Blueberry Oat Pancake Recipe

Try something new at breakfast with these easy to make, healthy pancakes that the whole family can enjoy together!


1 cup Old-Fashioned Rolled Oats
1 cup Blueberries
2 large Eggs
1/2 cup Low-Fat Cottage Cheese
1 tsp Vanilla Extract


1. Add oats, cottage cheese, eggs, and vanilla to blender and mix until a smooth batter forms.

2. Pour batter into bowl and gently stir in blueberries.

3. Heat a large non-stick pan over medium heat and coat with cooking spray. Spoon two tablespoons of batter per pancake into the pan and cook for about three minutes per side, or until golden brown.
